15-Minute Green Macro Bowl

A quick and easy lunch that tastes amazing and leaves you feeling good! I don't know about you but usually by the time I am ready for my lunch I don't want to make something that will be too tedious or time-consuming, so a simple macro bowl is a great staple to have in your repertoire. This bowl is super simple and packed with plant protein, unrefined carbohydrates, healthy fats, fibre, iron, calcium, Vitamin C, Vitamin A, and more amazing micronutrients! Heres the how-to;

Ingredients

- 1/4 cup of quinoa

- 1/3 block of Organic Village chickpea and linseed tempeh, chopped into bite-size chunks

- 4 broccolini stalks

- handful of snow peas

- 1 large handful of kale and spinach

- 1/4 cup of shelled edamame

- 1 tbsp. Tamari

- drizzle of 100% maple syrup

- 1 tsp. of both cumin and cayenne pepper

- 1/2 of 1 lime

- 1 tbsp. pepitas and sunflower seeds

- 1 fingernail size piece of fresh ginger, diced finely


Method

1. Heat a frying pan on medium-high heat.

2. Cook the quinoa as directed and prepare the veggies and tempeh.

3. Once the pan is hot, add the tempeh and ginger, and season with the cumin and cayenne pepper.

4. Drizzle the Tamari and Maple Syrup on the tempeh and turn the pieces over to coat. Add 1 tbsp. of water to the pan if the tempeh sticks too much,

and continue to add water when necessary.

5. Add the broccolini and the snow peas to the pan and continue to turn the tempeh over to crisp each side.

6. When the broccolini and snow peas begin to turn a brighter green add the kale and spinach to lightly sauté, and the edamame to warm slightly.

7.When the quinoa has absorbed all of the water spoon into a large bowl and add the kale and spinach, broccolini, snow peas, edamame, and tempeh, then drizzle with fresh lime and top with pepitas and sunflower seeds.

8. Enjoy!


Tip: double, triple or quadruple the quantities to make yourself some meal prep for the week!
